Day 10: Steak & Egg Enchilada with Tomatillo Salsa Topped with Pepper-Jack Cheese on Spinach Tortilla

One thing I noticed about this was that the cheese was on the outside.  Since I am constantly on the go, there really was no reason for the cheese to be on the outside but because this is an "enchilada" and not a burrito, that's how they did it.  So I put the cheese on the inside myself.  I should have also put the sauce on the inside.  I'm not too crazy about the "Tomatillo Salsa" anyway.  It's really good on it's own with the cheese, egg, and steak.
