Day 14: Fillet of Swordfish with Red Wine & Shallot Reduction with Butternut Squash Puree and Roasted Green Beans with Garlic Ponzu and Dashi

A beautiful dish gone horribly wrong.  The puree was too tart, the swordfish had no flavor, the red wine sauce was a glutinous mess, and the green beans were rubbery.  I didn't taste a bit of garlic and it took me an hour to finish this unpleasant dish.  These are small dishes that can be eaten within about 15 minutes if it was delicious.  Just a huge disappointment.  The worst dish yet.
