Day 11: Caramelized Onion Goat Cheese Lasagna with Eggplant, Spinach and portobello Mushroomswith Roasted Red Beets and Green Beans with Walnuts & Garlic

This dinner is called the "Caramelized Onion Goat Cheese Lasagna with Eggplant, Spinach and portobello Mushroomswith Roasted Red Beets and Green Beans with Walnuts & Garlic" and the dessert is a "Papaya Cheesecake".  So let me ask you... does this look like a lasagna to you?  Don't get me wrong, I ate it and it tasted pretty good, but it does not look like a lasagna.  The dinners are the only thing I don't travel with so it goes straight into the fridge.  There's really no excuse for shipping like this.  On the up side of things, the cheesecake was delish as usual even though it didn't taste like there was papaya in it.  That's okay because I am not crazy about papaya anyway.
